Fall Soups

I love, love, love fall. The chilly air always makes the farm animals frisky and I so enjoy watching the horses frolic and play in the crisp morning air. I also feel like fall is the best time for trail rides. All of nature is shifting into the beautiful rest of winter, which means every bit it busy with preparing and planning for the long months ahead I also love pumpkins, squash apples and soup! Eveb more reasons to love autumn! This soup recipe is so simple and versitile I utilize it many times a season. It was originally Butternut Squash Bisque but can also be made with pumpkin. I love picking up pumpkins either from the farm or grocery store and cooking them down to stockpile for the winter. They are inexpensive and easy to use and an average size pumpkin goes a long way!
